3 Easy Lunches For School/Work | B2S 2014

Hello all, my last Back2School post is here!

If you're like me, then on most occasions you bring something to eat with you to School/Work. Even though you can have school dinners, it's proven that bringing in your own lunch is healthier and cheaper, so how about for a day you choose to bring in a lunch for a change?!
I'm going to share with you 3 of my favorite lunches that i bring with me, they may not always be a bunch of greens, but can still be healthy! I think you need something that will keep you going throughout the day, that's where these recipes come in.

My first recipe has to be Cold Rice! Wow, it sounds lovely, right? Well of course it isn't just RICE, but i guess you'll find that out in the recipe...


Healthy Rice Salad
Ingredients:
  • Flavored Cold Cooked Rice (300g) - It doesn't have to be flavored. 
  • Sweetcorn (100g + Defrosted) 
  • 2 Red Peppers, Sliced into small piece
  • A Bunch of Parsley, Chopped
  • 1/4 Cucumber 
  • 1/2 Carrot
TIP: YOU CAN ALWAYS USE : TOMATOES, PEA'S AND OLIVES!

Method:

1. Firstly, you want to take the cold, cooked rice out of the fridge and it would've probably clumped together, so break it up in a large mixing bowl. Then add the Sweetcorn, Parsley, Cucumber, Carrot and pepper and mix it all in together.

2. Then you want to season it (Salt+Pepper). Finally, cover the bowl with cling film and put it back in the fridge. 

(This recipe isn't just for one day, it can be used for about 3 days!)

Prawn Pot 

Ingredients:
  • 100g Cooked Prawns
  • 195g Can Sweetcorn (It doesn't have to be canned)
  • 1 Carrot, grated
  • 1 Baby Gem Lettuce, shredded
  • 1/4 Cucumber, diced
  • Juice of 1/2 Lemon
  • 5 or 6 tbsp Mayonnaise 
  • Smoky Paprika 
Method:

1. Layer the salad in a bowl, starting with the lettuce, then the sweetcorn, cucumber, carrot and the prawns on top.

2. Then in a separate (small) bowl, mix together the Mayonnaise, juice of 1/2 lemon  and a tablespoon of the smoky paprika. Finally, put it  in the fridge, or put in you bag ready for school!

TIP: YOU CAN ALWAYS SEASON IT OR ADD MAYONNAISE OVER THE TOP!

Coronation Chicken Sandwich Bites

Ingredients:
(Coronation Chicken - This may take a little longer, so i suggest you making it the night before)

  • Shredded Chicken from a pre-roasted chicken
  • 3 tbsp Mayo
  • 1 tsp Mild curry Powder to taste
  • 1/2 tsp cinnamon 
  • 1/2 Teaspoon Salt
  • 1 tbsp Mango Chutney
  • Handful of Sultanas
Method:

1. Mix the Mayonnaise, Mild Curry Powder, Cinnamon,  Salt, Chutney and Sultanas together. You can always change the amount of each ingredient for a different taste.

2.Then you want to mix it with the shredded chicken.

3. Put it in the fridge, or...

Ingredients:
(Coronation Chicken Sandwich Bites)
  • Brown Bread (2 slices)
  • Lettuce, cut into slices
  • Cucumber, sliced 
TIP: YOU CAN ALWAYS USE DIFFERENT TYPES OF VEGETABLES WITH THE SANDWICH!

Method:

1. Get the 2 slices of brown bread and spread on the coronation chicken , prepared earlier, to one of the slices.

2. Then, you want to place on top the cucumber and lettuce and press the other slice on top and you've made your sandwich.

3. To make it the Sandwich "Bites" then cut the sandwich into 4 equal squares and enjoy!
