My first dessert is ...
Roasted Banana's
Ingredients:
- 1 medium ripe banana, cut in half lengthwise
- Sprinkle of cinnamon
- Granola
- Low Fat Yogurt
- First you want to preheat your oven to 400 Degrees, then peel your bananas.
- Arrange your banana in an oven safe dish, or tin foil and sprinkle the cinnamon onto it (adds to the taste)
- Then you want to cover it up and bake it for 10 to 15 minutes, depending on how soft you like them.
- Lastly, take them out the oven and wait for them to cool, place them on a plate and put a spoonful of the Low Fat Yogurt on top with the Granola.
TIP: YOU DON'T HAVE TO USE GRANOLA+YOGURT AT THE END, YOU COULD USE RAISINS, FRUIT, CHOPPED NUTS OR (FOR A LITTLE BIT OF AN UN-HEALTHIER APPROACH) ICE CREAM!
My second desert is...
Almond Crescent Cookies
Ingredients:
- 1/3 cup of granulated sugar
- 1/2 cup whole almonds, finely grounded
- 5 ounces (10 tablespoons) unsalted butter, room temperature
- 1 1/2 cups plus 1 tablespoon all purpose flour
- 1 cup powdered sugar
Method:
1. Beat all of the ingredients (apart from the powdered sugar) for about 2 minutes. Then you want to let the batter rest for about two hours.
2. Next, preheat the oven to 325 degrees and ,when the dough has rested for a couple of minutes, roll 1 tablespoon of dough into a crescent shape, do this for the rest of the dough. Then you want to place the cresnet shapes onto the baking sheet.
3. Bake until they are golden brown (25-30 minutes) and when they are done, cool on the trays for 10 minutes and roll the cookies in the powdered sugar.
TIP: YOU CAN ROLL IT IN VANILLA SUGAR FOR A DIFFERENT FLAVOUR AT THE END.
My last dessert is...
Single Serving - Vegan Banana Bread
Ingredients:
- 1/2 Banana
- 2 Tablespoons whole- wheat flour
- 1 tablespoon organic sugar
- 1/8 tablespoon baking powder
- 1/8 tablespoon cinnamon
- 1/4 teaspoon vanilla extract
- 1/2 teaspoon coconut oil
- 1 teaspoon dairy free chocolate chips (it can just be normal ones too)
- 1 teaspoon of walnuts
Method:
1. Mash the banana in a small bowl and then add all the ingredients to that bowl (apart from the chocolate chips and walnuts.) Mix it well to create a smooth batter.
2. Mix some of the chocolate chips and walnuts in, if you want you can save some till the end for topping.
3. Then lightly spray a microwaveable friendly mug or bowl with cooking spray and pour in the batter. If you saved some, sprinkle over the top the chocolate chips and walnuts.
4. Microwave it for 70- 90 seconds until the batter has turned dry - dont overcook it though because it will turn chewy and tough.
5. Take it out of the microwave and leave it to cool for about a minute then eat!
TIP: YOU CAN USE RAISINS OR GRANOLA OVER THE TOP IF YOU WANT!
