What you'll need:
- 12 Carrots
- A tin of coconut milk
- 2 tbsp sweet chilli sauce
- Finely chop 1 medium onion
- Chunk of butter (1/4 cup of butter)
- Salt and Pepper
- 2 cups of chicken broth
Method
- Peel and chop the carrots into 2cm chunks.
- Then put the butter, carrots, onion and some salt and pepper in a large pan. Put it on a medium heat and keep stirring it, so it doesn't catch, for 15-20 minutes or until the carrots are soft.
- Lower the heat and add the chicken broth, sweet chilli sauce and coconut and mix together. Then let this boil and simmer for 40-45 minutes.
- Next you want to leave it to cool then use a hand blender to get all the lumps out of it! Feel free to add some water if it gets to thick (I always do!)
This recipe makes at least 4 portions, so it will last you days, as long as you refrigerate it! Carrot is so beneficial to your skin because Vitamin A and antioxidants protects the skin from sun damage. Vitamin A also prevents premature wrinkling, acne, dry skin, pigmentation, blemishes, and uneven skin tone, so eat lots of carrot!
